Journey of a Dish: Royal Mail Hotel
The Royal Mail Hotel, in partnership with Tourism Victoria and Grampians Tourism, has showcased the region’s amazing produce and natural surrounds in a new short film,
‘Journey of a Dish’.
Produced by Sarah-Jane Woulahan, the film highlights some of the region’s fantastic food producers including Mt Zero Olives, Greenvale Meats and Grampians Pure Sheep
Dairy, through stunning images and thoughtful commentary from the Royal Mail Hotel’s award-winning chef, Dan Hunter.
Dan Hunter has been at the helm of the Royal Mail Hotel’s kitchen since 2007. His food philosophy is driven, in part, by seasonality and location. “This allows for greater understanding of, and respect for, the natural environment and greater control over the production of our own non-commercially available resources,”
The film was first shown during Dan Hunter’s presentation at the Langham Melbourne Masterclass on March 11, as part of the 2012 Melbourne Food & Wine Festival.
Dan Hunter, Executive Chef at the Royal Mail Hotel in Dunkeld, Victoria explores the roots of the ingredients of three recipes;
Tomato on toast, hand-made sheep’s ricotta
Eel and bone marrow, eggplant, pickled vegetables
Rare breed pancetta
